Vegan French Toast
_________________________________For the French toast:
1 pound medium-firm tofu
1 cup soy milk
1 teaspoon vanilla
1 teaspoon cinnamon
3 tablespoons maple syrup
1/8 teaspoon nutmeg
8 to 10 slices thick bread
Earth Balance or coconut oil
For the apple-cinnamon topping:
4 apples, peeled, cored, thinly sliced
2 teaspoons fresh lemon juice
1 to 2 tablespoons vegan margarine
2 tablespoons brown sugar
1 teaspoon cinnamon
Editor's note: white bread gives you a traditional French toast, but feel free to substitute whole wheat bread.
1. In a food processor, add tofu, soymilk, vanilla, cinnamon, maple syrup, and nutmeg, and blend until smooth. In a baking dish, pour tofu mixture.
2. Dip bread in mixture lightly, being careful not to soak it. In a large pan lightly greased with Earth Balance or coconut oil over medium heat, fry bread until brown (5 to 6 minutes). Flip and fry other side for another 5 to 6 minutes.
3. To make topping, in a medium bowl, add apples and lemon juice, and then stir together. In a large pan over medium heat, melt Earth Balance or coconut oil, then add apples, sugar, and cinnamon. Cook 8 to 10 minutes, stirring occasionally, until apples are soft. Serve warm topping over French toast.
