Fresh Peach Cobbler

It's a sweet and fresh dessert that's easy to make, and full of healthy satisfying flavors.

Crust:
 
You can use a healthy store-bought crust. Or, if you want to avoid flour, here's a crust you can make from healthy whole foods:
 
1-1/2 cups soaked and dehydrated almonds, walnuts or pecans (1 cup before soaking)
1/2 cup pitted dates
1/8 tsp. Celtic sea salt
Pinch of cayenne pepper
 
* Puree the nuts until they become a meal.
* Add the dates, salt and cayenne and continue to puree until the crust forms a ball.
 
Filling:
 
1/4 cup soft, pitted dates
1 tsp. lemon zest
1 tsp. cinnamon
3 peaches, chopped
6 large peaches, sliced (reserve 1 for decoration)
 
* Puree the dates, lemon zest, cinnamon and 3 chopped peaches in a food processor or heavy duty blender.
* In a large bowl, mix all the ingredients including the sliced peaches with your hands.
* Pour the mixture into the pie crust and shape into a nice round pie.
* Refrigerate for 1-2 hours before serving.
 
Crumble Topping:
 
1 cup soaked and dehydrated walnuts or pecans
1/2 - 3/4 cup Rapadura (whole food dehydrated cane juice) or Lakanto
1 Tbs. cinnamon powder
 
* Puree everything in a food processor until crumbly.
* Top the cobbler just before serving (not before or it will get soggy)
