This dressing offers all the benefits of flax, sunflower and evening primrose oils -- with a flavor that complements winter greens. Try it drizzled over salad greens or steamed vegetables.
Herbed Flax Salad Dressing
Ingredients
3 tablespoons apple cider vinegar or lemon juice
1 tablespoon chopped chives
1 tablespoon chopped parsley
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dry mustard
1 large clove garlic, roughly chopped
3 tablespoons flaxseed oil blend
Pinch of cayenne
Salt and pepper
Method
In a blender or food processor, combine vinegar, chives, parsley, basil, oregano, mustard, and garlic and blend until smooth. Slowly add oil in a fine stream and blend until slightly creamy. Season with cayenne, salt and pepper. Makes 1/2 cup.
