Yum, Tearty, Healthy Chocolate Pie!

Hi Tearty!

Back in December, I sent you a Cinnamon Buns recipes. Many of you replied saying you were avoiding white flour, white sugar, and margarine. Good for you!

To better accomodate you, here's a healthy dessert recipe created by Catrina Marie McFate at http://www.naturallymehealthcoaching.com

It's a sweet treat that's healthy too. Its creamy, its thick, its Chocolate Avocado Pie!

Now you might think, "What, avocados?... weird!" But once you make it, I bet you'll be a believer. You won't taste the avocado. But you'll get a dessert that's creamy and nutritious-- without having to use processed fats like Earth Balance, or worse, margarine.

This dessert can be made raw or almost raw.  It takes as little as 5 minutes to prepare and could fool anyone into believing it's just a normal dessert!

Ingredients for raw pie crust:

(If you choose not to use a raw pie crust, a regular graham cracker crust will do just fine)

  •        1/2 cup raw walnuts
  •        ½ cup raw sunflower seeds
  •        ¾ cup of dried apricots
  •        2 -3 chopped dates
  •        ¼ cup raw agave or honey
  •        Optional-ground chia /flax /almond meal
  •
    Ingredients for filling

  •        1/4 - 1/3 cup almond milk or other non-dairy milk
  •        2 bananas
  •        2 avocados
  •        3 Tbsp raw cocoa powder
  •        2 Tbsp raw agave or honey  (or any sweetener of your choice)
  •        2 Tbsp raw nut butter of your choice (almond or macadamia nut are my favorites)
  •        1 Tbsp raw coconut oil
  •        1 tsp raw vanilla powder
  •        4-5 dashes Himalayan sea salt
  •        Optional- some coconut flakes and chia seeds (for a topping... use as much as you desire.  I usually use about 1-2 tsps of each)

  • Directions for Raw Pie Crust

Place the first 4 ingredients in a food processor until it becomes moist and mealy.  While processor is on slowly add the agave or honey until the mixture forms a ball shape.  Place the crust into a pie dish and form a pie crust.  You can sprinkle it with some ground chia,
flax, or almond meal and press it into a pie crust shape with wax paper to make it a bit easier.

Directions for Chocolate Avocado Pie Filling

Mix all ingredients in a blender or food processor until it's a creamy smooth texture. Fill it into the raw pie crust or a graham cracker pie crust. (Optional-sprinkle it with a topping of chia seeds and coconut flakes.) Freeze for 20min before eating to help it keep its shape when you serve it. Enjoy!
