Sweet & Tangy Berry Dressing

In the Vegan / Vegetarian Mastery Program, I learned 12 ways to make leafy greens delicious *without* drenching them in oil. One is to use oil-free dressings.
 
Here's one by Nomi Shannon. She especially likes it when poured over a salad of endive, basil strips, and strawberries.

This recipe requires almost no fat -- just 1 Tbsp of avocado. The tanginess of the lemon juice, lemon zest, strawberries, and raspberries is offset by the honey (or sweetener of your choice).

8 strawberries
16-20 raspberries
4 tsp honey or your favorite liquid sweetener
1 Tbsp avocado
1 Tbsp water
2 Tbsp lemon juice
2 tsp lemon zest
2 fresh basil leaves
Sea salt and pepper to taste

Combine all ingredients in a blender. Puree. Serves 2-4.
