Makes 1 1/2 cups
Tofu replaces buttermilk and mayonnaise in this popular dairy-free
version of the classic Midwestern salad dressing. Great on raw
vegetables, crudités, as well as salad and cooked greens such as
broccoli, bok choy or kale.
1/2 pound tofu, 1 cup, fresh, medium or soft
1 green onion, sliced
1 tablespoon parsley
1 tablespoon fresh dill or 1 teaspoon dry dill
1 clove garlic
1 1/2 tablespoons lemon juice
1 tablespoon umeboshi (pickled plum) paste
1 teaspoon natural soy sauce
1 teaspoon extra virgin olive oil
2 teaspoons brown rice vinegar
1/4 teaspoon white pepper
1/4 to 1/2 cup water
Purée dressing ingredients, adding water gradually, until smooth.
