Yum, tearty, healthy banana oatmeal cookies!

Hi tearty!

Today I'm sending you a healthy cookie recipe made with coconut oil
instead of butter or margarine.

The reason is, I listened to Trevor Justice's Q&A call with Elaina
Love, and discovered that coconut oil has some amazing health
benefits.

Banana Oatmeal Cookies
-------------------------------

These delicious cookies contain no white flour or white sugar. And
they use coconut oil instead of butter or margarine.

Most manufacturers use the phrases "Coconut oil" and "coconut butter"
interchangeably. (Except Artisana; if you buy that brand, choose the
"coconut oil").

Ingredients:

* 3 ripe bananas
* 1 cup seedless raisins or "sultanas"
* 2 cups rolled oats
* 1/3 cup coconut oil/butter, melted
* 1 tsp. vanilla extract
* 1/3 cup unsweetened shredded coconut

Directions:

1. Preheat oven to 350 degrees.

2. In large bowl, mash the bananas, stir in oats, raisins, shredded
coconut, coconut oil/butter, and vanilla. Mix well and allow to sit for 15 minutes.

3. Drop by teaspoonfuls onto un-greased cookie sheet and bake for
15-20 minutes (depending on your oven).
