Yum, Tearty, Pecan Crusted Tofu with Golden Gravy

Pecan Crusted Tofu with Golden Gravy

This recipe is from the popular vegan cookbook by chefs Mark Reinfeld and Bo Rinaldi.

Pecan Crusted Tofu with Golden Gravy

Makes: 8 small cutlets (serves 4)

Prep Time: 15 minutes

Cook Time: 20 minutes

Tofu Marinade

  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • 2 cloves garlic, pressed or minced
  • 1 14-ounce package extra firm tofu, drained well

Tahini Spread

  • 1/4 cup tahini
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons water
  • 1 teaspoon soy sauce

Coconut Pecan Crust

  • 1/2 cup plus 2 tablespoons chopped pecans
  • 3 tablespoons dried shredded coconut
  • 2 tablespoons minced Italian parsley
  • 1/2 teaspoon ground cumin or chile powder, optional
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon sea salt, or to taste

1. Preheat the oven to 375°F. Place all of the tofu marinade ingredients in a 9 inch by 13 inch casserole dish and stir well. Slice the tofu lengthwise to form 4 cutlets. Slice each cutlet in half diagonally to yield 8 triangle shaped cutlets.

2. Place the cutlets in the casserole dish and allow to sit for 5 minutes, flipping occasionally. Place the casserole dish in the oven and bake for 10 minutes.

3. Meanwhile, combine the tahini spread ingredients in a small bowl and mix well. Depending upon the consistency of the tahini, you may need to add some water to get a smooth consistency.

4. Place all of the crust ingredients in another bowl and stir well.

5. Remove the tofu from the oven. Spread a thin layer of tahini on each cutlet and top with the pecan crust. Return to the oven and bake for an additional 10-15 minutes before serving.

Variations

~ Replace the tofu with tempeh or portobello mushrooms.

~ For added flavor, try toasting the pecans and the dried coconut. To do this, place them on separate baking sheets and bake in the 375°F oven until golden brown. The pecans will take approximately 8 minutes, and the coconut will take approximately 3 minutes. Be careful not to overcook.

~ You can replace the pecans with other chopped nuts such as walnuts, pistachios or macadamia nuts.

~ Replace the Italian parsley with other fresh herbs such as basil, dill, or cilantro.

Golden Gravy

Makes 4 cups

  • ¼ cup flour
  • ¼ cup + 1 tablespoon safflower oil
  • 1 ½ cups onion, half moon slices
  • 1 cup shiitake mushrooms, sliced
  • 4 teaspoons garlic, minced
  • 2 ½ cups water or veggie stock
  • ¼ cup nutritional yeast
  • ¼ cup wheat-free tamari or soy sauce
  • 1 tablespoon dried or fresh sage, minced
  • ½ teaspoon fresh ground black pepper
  • sea salt - to taste

1. Create a roux by combining flour and ¼ cup oil in a small bowl and whisking well.

2. Place remaining tablespoon of oil in a sauce pan on medium high heat. Add onion and garlic and cook until onions are translucent, approximately 5 minutes, stirring frequently. Add water, nutritional yeast, tamari, sage and bring to a boil, stirring frequently.

3. Reduce heat to simmer, add roux and stir constantly until sauce thickens. Add salt and pepper to taste.

Serving suggestions

~ serve over mashed potatoes (see the Garlic Mashed Potatoes recipe in The 30-Minute Vegan), pasta, rice, tofu or tempeh cutlets.

Variations

~ try replacing sage with other fresh minced herbs like parsley, dill or basil.

~ you can also create the roux by cooking the flour and oil over high heat for a few minutes until the flour browns this will impart a rich flavor and darker color to your gravy.

Surya's Fire Roasted Gazpacho

 40 minutes / 4-5 servings

    4 C Tomato juice, fresh
    4 large Roma tomatoes, grilled (1 ½ C chopped)
    2/3 C Filtered water or vegetable stock
    2/3 CCucumber, peeled, seeded & diced
    2/3 C Corn, fresh or frozen
    ½ C Green bell pepper, diced
    1/3 C Red onion, diced
    3 Tbl Lime juice, fresh squeezed
    3 Tbl Cilantro, minced
    1 Tbl Soy Sauce, or to taste
    1 Tbl Basil, minced
    1 ¼ tsp Cumin powder, toasted
    1 tsp Garlic, minced
    1 tsp Jalapeño pepper, seeded & minced
    ½ tsp Chili powder
    ½ tsp Hot sauce (optional)
    Pinch Cayenne pepper
    Sea salt, to taste
    Black pepper, ground to taste

Instructions

Place tomatoes and juice in blender and blend until smooth. Place in a large mixing bowl with remaining ingredients and mix well. Serve chilled, the colder the better.

Variations

1. Commercially-available Spicy Tomato Vegetable Juice may replace tomato juice, and canned fire roasted tomatoes may replace grilled tomatoes.

2. For a Live Gazpacho, do not grill the tomatoes, roast the jalapeño pepper or toast the cumin powder. Use freshly-juiced tomatoes.

Yum, Tearty, Dilled Broccoli or Green Bean Soup!

When it comes to healthy eating, do you ever feel separate or isolated? Do you wish your loved ones supported you more?
 
 
It's called "7 Ways to Share Healthy Eating with Family and Friends" and it's written by the good people at The Vegetarian Health Institute.
 
Today's recipe comes from Lenore Baum, M.A. www.lenoresnatural.com .

It's from her book: "Sublime Soups: Vegetarian Soups and Quick Breads".

Dill adds a distinct undertone to this velvety broccoli soup. Since it is pressure-cooked, you will have it on your table in about twenty minutes. This recipe was adapted from  Lorna Sass' Complete Vegetarian Kitchen.

Ingredients:

4 cups water
1 large bunch broccoli
1⁄2 tsp. Herbamare®  (or 1/2 tsp. unrefined sea salt)
1⁄4 tsp. unrefined sea salt
1 jumbo onion, cut into large pieces
1⁄3 cup rolled oats
2 Tbs. sweet, white miso
1⁄4 cup fresh dill, tightly packed
1 fresh dill sprig per serving, to garnish

Directions

1.Bring 4 cups of water to a boil. Meanwhile, separate the broccoli into florets. Peel the broccoli stalks and cut them into large pieces. Add all of the broccoli, the Herbamere®, onion and oats.

2. Reduce the heat and simmer for 20 minutes.

3. Transfer the soup to a blender with the miso and the dill. (Alternatively, you can use a hand blender.) Process until  smooth. Serve in individual soup bowls, each garnished with a fresh dill sprig.

Variation: Substitute about 6 cups of chopped green beans for the broccoli.

Hemp Seed Tabouli -- by Storm Talifero

- 1/4 bunch cilantro
- 1/4 bunch parsley
- 1/4 bunch green onions
- 1/2 tomato
- 1/2 avocado
- 1/8th cup of hemp seeds
- juice of 1/2 a lemon
- 1/2 tablespoon olive oil
- 1/4 teaspoon salt

Chop up cilantro, parsley, green onions, tomatoes and avocados, and place in a bowl. Add hemp seeds, lemon juice, olive oil, and  salt. Toss and serve.

(Serves 1)

Great homemade chocolate pudding in under five minutes? You'll be an instant believer with this remarkable recipe.

1 package (about 12 ounces) firm silken tofu, crumbled
1/3 to 1/2 cup organic "raw" sugar
1/3 cup unsweetened cocoa powder
2 teaspoons vanilla extract
Tiny pinch salt (optional)

Combine all the ingredients in a food processor or blender. Process until very smooth, creamy, and thick. Start with the smaller amount of sugar and add more to taste. Chill thoroughly before serving. Stored in a covered container in the refrigerator, The World's Best (and Easiest) Chocolate Pudding will keep for about 5 days.

Vegan French Toast

For the French toast:
 
1 pound medium-firm tofu
1 cup soy milk
1 teaspoon vanilla
1 teaspoon cinnamon
3 tablespoons maple syrup
1/8 teaspoon nutmeg
8 to 10 slices thick bread
Earth Balance or coconut oil
 
For the apple-cinnamon topping:
 
4 apples, peeled, cored, thinly sliced
2 teaspoons fresh lemon juice
1 to 2 tablespoons vegan margarine
2 tablespoons brown sugar
1 teaspoon cinnamon
 
Editor's note: white bread gives you a traditional French toast, but feel free to substitute whole wheat bread.
 
1. In a food processor, add tofu, soymilk, vanilla, cinnamon, maple syrup, and nutmeg, and blend until smooth. In a baking dish, pour tofu mixture.
 
2. Dip bread in mixture lightly, being careful not to soak it. In a large pan lightly greased with Earth Balance or coconut oil over medium heat, fry bread until brown (5 to 6 minutes). Flip and fry other side for another 5 to 6 minutes.
 
3. To make topping, in a medium bowl, add apples and lemon juice, and then stir together. In a large pan over medium heat, melt Earth Balance or coconut oil, then add apples, sugar, and cinnamon. Cook 8 to 10 minutes, stirring occasionally, until apples are soft. Serve warm topping over French toast.
